Talking Cooking - Get Back To The Basics

Cooking is an art and as a cook one puts so much love, right from picking fresh veggies to adding the right amount of flavor and spices and serving nutrient rich and healthy food. Well am sure! However most us are unaware of the health hazards of using metal utensils we use to cook, which risks ones health. So what do we use to cook food?

According to Ayurveda it is believed that food cooked in earthenware is nutritious as its keeps the nutrients intact.

'Ayurveda' suggests Earthenware or Artisanal Kitchenware and if you can recall in olden times people used to cook in clay pots, like degchi and handi. Further, consuming food cooked in earthenware helps build immunity. Earthen Ware Pottery dates back to Indus Valley Civilization and the phase of glazed pottery started in the 12th century AD.


With changing lifestyle people had been shifting to glassware and steel ware for the reason it saved a lot of time as compared to the earthenware pots. Not sure if you can recall the taste of that Biryani cooked in Earthenware Handi, one can never forget the flavor, it tastes much better than that cooked in any other utensil.


ADVANTAGES

Since Clay is alkaline in nature other than being porous and when food is cooked it neutralizes the ph balance of food and hence you can cook food with less fat and oil. Further, the cooking process in earthenware pots is slow which helps retain the food nutrients. Try to pick unglazed and lead free earthenware pots for cooking and serving.


DISADVANTAGES

Earthenware Pots requires some care and handling with respect to seasoning else there is the risk of cracking when it comes to temperature. If the temperature changes too quickly, they can crack. Avoid moving cold pot to a hot flame to avoid cracking. With some care instructions handy, it does not seem a challenge to use earthenware pot and once gets used to it. Now that more and more people are conscious about their health and prefer using age old method of cooking are slowly moving to the basics and hence prefer terracotta crockery or ceramic. Going back to the age when our Naani's and Daadi's used to cook Aviyal in Bell Metal Urulis (Kerala), or Kal Chatti, Sambhar was cooked in Man Satti and setting the Doi (curd) in Terracotta Pot (I can tell you if you haven't tried this before, try and see it yourself, the taste and the curd consistency would be far better than set in any other utensil.

Ah! remember that Kulhar Wali Chai! the tea meant heaven, every single flavor is distinct from milk to cardamom and the smell of clay while drinking.

In the year 2017, the Craft Council of India (CCI) held an event, 'Patram' and during this event they launched the Longpi Hampai Pottery, from Manipur. Longpi Pottery is bio-degradable and is completely natural since no chemicals or artificial products are added. Besides the artisans do not use machines in the making of the potteries as the mixture requires pounding, kneading and moulding using hand.

It's time we move away from plastic to our basics that is eco-friendly and has added health benefits!
